Ingredients
  

1 lb Italian sausage (mild or spicy, based on your preference)

4 large russet potatoes, sliced into thin rounds

1 large onion, diced

4 cloves garlic, minced

6 cups chicken broth

1 cup heavy cream

2 cups kale, chopped

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Olive oil for sautéing

Grated Parmesan cheese for garnish

Instructions
 

In a large pot, heat a tablespoon of olive oil over medium heat. Add the Italian sausage, breaking it apart with a spatula, and cook until browned. Remove the sausage from the pot and set aside.

    In the same pot, add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Pour in the chicken broth and bring to a boil. Once boiling, add the sliced potatoes and cook until tender, about 10-15 minutes.

        Reduce the heat to low, and stir in the heavy cream and cooked sausage. Allow the mixture to heat through without boiling.

          Add the chopped kale and red pepper flakes (if using). Cook for another 3-5 minutes until the kale is wilted.

            Season with salt and pepper to taste.

              Serve hot, garnished with grated Parmesan cheese.
