2 medium zucchini, thinly sliced lengthwise

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup fresh spinach, chopped

1 clove garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

1 cup marinara sauce

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Prepare the Zucchini: Start by preheating your oven to 375°F (190°C). Using a mandoline or a sharp knife, slice the zucchini into thin strips (about 1/8 inch thick). Sprinkle with salt and let them sit for about 10 minutes to draw out moisture. Pat dry with paper towels.

    Make the Filling: In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, chopped spinach, minced garlic, Italian seasoning, and red pepper flakes (if using). Season with salt and pepper to taste. Mix thoroughly until well combined.

      Assemble the Roll-Ups: Lay one zucchini strip flat on a clean surface. Place 1-2 tablespoons of the cheese filling at one end of the slice and roll it up tightly. Repeat this process with the remaining zucchini slices and cheese filling.

        Prepare the Baking Dish: Spread a thin layer of marinara sauce on the bottom of a baking dish. Arrange the zucchini roll-ups seam side down in the dish, tightly packed together. Pour the remaining marinara sauce over the roll-ups and sprinkle the rest of the mozzarella cheese on top.

          Bake the Roll-Ups: Drizzle olive oil over the top of the roll-ups and cover the dish with aluminum foil. Bake in the preheated oven for about 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
