Ingredients
  

1 cup wild rice blend

2 cups vegetable broth (or chicken broth)

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup carrots, diced

1/2 cup celery, diced

1/2 cup dried cranberries

1/2 cup pecans, chopped and toasted

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Rinse the Rice: Rinse the wild rice under cold water in a fine mesh strainer to remove any impurities. Drain well.

    Cook the Rice: In a large pot, bring the vegetable broth to a boil. Add the wild rice, reduce the heat to low, cover, and simmer for about 45-50 minutes, or until the rice is tender and has split open. Drain any excess liquid and set aside.

      Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables are tender and the onion is translucent.

        Combine Ingredients: Add the cooked wild rice to the skillet with the sautéed vegetables. Stir in the dried cranberries, toasted pecans, thyme, rosemary, and season with salt and pepper to taste. Cook for an additional 3-5 minutes, stirring occasionally, until everything is well mixed and heated through.

          Serve: Remove from heat and transfer the pilaf to a serving dish. Garnish with fresh chopped parsley before serving.
