1 medium-sized seedless watermelon

1 tablespoon lemon juice

1 teaspoon sea salt

1/2 teaspoon paprika (optional, for a kick)

1 cup Greek yogurt (or dairy-free alternative)

2 tablespoons honey (or maple syrup for vegan)

1 teaspoon vanilla extract

1/2 cup mixed berries (strawberries, blueberries, raspberries) for garnish

Fresh mint leaves for garnish

Prepare the Watermelon: Cut the watermelon in half widthwise. Scoop out the flesh using a melon baller or knife, making sure to leave the rind intact. Cut the watermelon flesh into thick rectangular fries.

    Flavor the Fries: In a large bowl, toss the watermelon fries with lemon juice, sea salt, and paprika (if using). Allow the fries to marinate for about 10 minutes to absorb the flavors.
