Ingredients
  

1 small head of red cabbage, thinly sliced

2 large carrots, grated

1 red bell pepper, thinly sliced

1 cup green onions, chopped

½ cup fresh cilantro, chopped

½ cup apple cider vinegar

2 tablespoons olive oil

2 tablespoons honey (or maple syrup for a vegan option)

1 teaspoon Dijon mustard

Salt and pepper to taste

Optional: ½ cup toasted sunflower seeds or walnuts for extra crunch

Instructions
 

In a large bowl, combine the thinly sliced red cabbage, grated carrots, sliced red bell pepper, chopped green onions, and cilantro. Mix well to evenly distribute the veggies.

    In a small mixing bowl, whisk together the apple cider vinegar, olive oil, honey (or maple syrup), Dijon mustard, salt, and pepper until well emulsified.

      Pour the dressing over the cabbage mixture and toss thoroughly until all the vegetables are well coated.

        Allow the slaw to sit for at least 15-30 minutes at room temperature or refrigerate for about an hour to let the flavors meld and the cabbage soften slightly.

          Just before serving, if desired, sprinkle on the toasted sunflower seeds or walnuts for an added crunch. Toss gently to combine.

            Serve chilled or at room temperature alongside your favorite grilled dishes or as a refreshing salad on its own.
