4 slices of sourdough bread

4 slices of sharp cheddar cheese

4 slices of cooked bacon

3 large eggs

1 tablespoon milk

1 tablespoon unsalted butter

Salt and pepper, to taste

Optional: sliced avocado or tomato for topping

Olive oil, for grilling

Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and let it drain on paper towels. Leave a small amount of bacon grease in the pan for added flavor.

    Scramble the Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper. In the same skillet (with the bacon grease or a bit of butter), pour in the egg mixture. Stir gently over low heat until the eggs are softly scrambled and slightly creamy. Remove from heat and set aside.

      Assemble the Sandwich: Take two slices of sourdough bread, and place a slice of cheddar cheese on each. Layer the scrambled eggs evenly over the cheese, followed by two slices of bacon on each piece. Top with another slice of cheddar cheese and the remaining slices of sourdough bread to complete the sandwiches.

        Grill the Sandwich: Heat a non-stick skillet over medium-low heat and add a little olive oil and a pat of butter for flavor. Carefully place the assembled sandwiches in the skillet.
