Ingredients
  

2 cups cooked turkey, shredded

1 cup brown rice, rinsed

1 medium onion, diced

2 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

6 cups turkey or chicken broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

1 cup frozen peas

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

    Add the garlic, carrots, and celery, and cook for another 5 minutes, stirring occasionally until the vegetables begin to soften.

      Stir in the shredded turkey, rinsed brown rice, thyme, rosemary, and bay leaf. Mix well for about 2 minutes to combine the flavors.

        Pour in the turkey or chicken broth, and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 30 minutes or until the rice is tender.

          Add the frozen peas and continue to simmer for an additional 5 minutes.

            Remove the bay leaf, and season the soup with salt, pepper, and lemon juice to taste.

              Serve hot, garnished with fresh chopped parsley.
