Ingredients
  

2 ripe mangoes, diced

1 medium dragon fruit (pitaya), peeled and chopped

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1 cup water

1/2 cup honey or agave syrup (to taste)

4 cups sparkling water

Ice cubes

Lemon slices and mint leaves for garnish

Instructions
 

In a blender, combine the diced mangoes and chopped dragon fruit. Blend until smooth and creamy.

    In a pitcher, combine the blended fruit puree with the freshly squeezed lemon juice and honey or agave syrup. Stir well until the honey is completely dissolved.

      Add the water to the mixture and stir to combine. Taste and adjust sweetness if needed.

        Chill the lemonade mixture in the refrigerator for about 30 minutes to let the flavors meld together.

          When ready to serve, fill glasses with ice cubes and pour the lemonade mixture until about 2/3 full.

            Top off each glass with sparkling water, gently stirring to mix.

              Garnish with lemon slices and fresh mint leaves before serving.
