Ingredients

1 cup cooked lentils (green or brown)

1 cup quinoa, rinsed and cooked

1 cup finely chopped spinach

1/2 cup grated carrots

1/2 cup diced bell peppers (red or yellow for sweetness)

1/4 cup chopped green onions

1/4 cup nutritional yeast (for cheesy flavor)

1/4 cup almond flour (or breadcrumbs)

2 tablespoons chia seeds (soaked in 6 tablespoons water)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Instructions

Prep the Chia Seeds: In a small bowl, mix the chia seeds with water and let sit for about 10 minutes to form a gel-like consistency.

Mix the Ingredients: In a large mixing bowl, combine the cooked lentils, cooked quinoa, chopped spinach, grated carrots, diced bell peppers, green onions, and nutritional yeast.

Add Binding Agents: Add the soaked chia gel, olive oil, garlic powder, smoked paprika, almond flour, salt, and pepper to the mixture. Stir until all ingredients are well combined and form a thick, sticky mixture.

Shape the Bites: Preheat your oven to 375°F (190°C). With your hands, form the mixture into small bite-sized patties or balls, approximately 1.5 inches in diameter.

Bake: Arrange the patties on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until they are golden brown and firm to the touch.

Serve: Let them cool slightly before serving. These Beauty Bites can be enjoyed warm or cold, perfect as a snack or a nutritious addition to a meal!
