1 pound Italian sausage (sweet or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, sliced

1 can (14.5 oz) diced tomatoes (with juice)

6 cups chicken broth

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

1 package (9 oz) fresh or frozen cheese tortellini

2 cups baby spinach

1 tablespoon olive oil

Salt and pepper to taste

Grated Parmesan cheese for serving

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.

    Add the minced garlic, sliced carrots, and celery to the pot. Cook for an additional 5 minutes, stirring occasionally until the vegetables are tender.

      Push the vegetables to the side of the pot and add the Italian sausage. Break it up with a spatula and cook until browned and cooked through, about 6-8 minutes.

        Stir in the diced tomatoes (with juice), chicken broth, dried oregano, dried basil, and red pepper flakes (if using). Bring the mixture to a boil.

          Reduce the heat to a simmer and add the tortellini. Cook according to package instructions, usually about 5-7 minutes, until the tortellini is tender.

            Once the tortellini is ready, stir in the baby spinach and cook just until wilted, about 1-2 minutes.

              Taste the soup and season with salt and pepper as needed.

                Serve hot, topped with grated Parmesan cheese for extra flavor.
