Ingredients

1 lb ribeye steak, thinly sliced

2 tablespoons vegetable oil

1 large onion, sliced

1 green bell pepper, sliced

1 cup mushrooms, sliced (optional)

Salt and pepper, to taste

4 slices provolone cheese (or Cheez Whiz for authenticity)

4 hoagie rolls

Garlic powder, to taste

Optionally, hot peppers for garnish

Instructions

Prepare the Steak: Freeze the ribeye steak for about 30 minutes to firm it up, making it easier to slice very thinly. Use a sharp knife to slice the steak against the grain into thin strips.

Cook the Vegetables: In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the sliced onions and green bell peppers, and sauté for about 5-7 minutes until softened. If using mushrooms, add them in the last 3 minutes of cooking. Season with salt, pepper, and garlic powder to taste.

Cook the Steak: Push the vegetables to the side of the skillet and add the sliced ribeye steak to the pan. Season it lightly with salt, pepper, and a bit of garlic powder. Cook for about 3-5 minutes until the steak is browned and cooked through.

Melt the Cheese: Reduce heat to low and layer the provolone cheese or Cheez Whiz evenly over the steak and vegetable mixture. Cover the skillet with a lid to help the cheese melt. This should take about 2-3 minutes.

Toast the Rolls: While the cheese is melting, you can toast the hoagie rolls. Heat a separate pan over medium heat and toast the insides of the rolls until they are golden brown.

Assemble the Sandwiches: Once the cheese has melted, use a spatula to scoop the steak and veggie mixture into the toasted hoagie rolls. Optionally, add hot peppers on top for an extra kick, if desired.

Serve Immediately: Enjoy your Philly cheesesteak hot and fresh from the skillet!
