Ingredients

2 pounds russet potatoes, peeled and diced

1 large onion, chopped

3 cloves garlic, minced

4 cups low-sodium chicken or vegetable broth

1 cup heavy cream (or half-and-half for a lighter version)

1 cup shredded cheddar cheese, plus extra for garnish

4 slices of cooked bacon, crumbled (optional)

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup chopped fresh chives (for garnish)

Instructions

Prep the Vegetables: Start by peeling and dicing your russet potatoes into small cubes. Chop the onion and mince the garlic.

Combine Ingredients in Crockpot: In your slow cooker, add the diced potatoes, chopped onion, minced garlic, thyme, smoked paprika, and broth. Stir to combine.

Cook Slow: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.

Blend for Creaminess: Once the potatoes are cooked, use an immersion blender to partially puree the soup for a creamy texture. Alternatively, you can transfer a portion of the soup to a blender, blend until smooth, then return it to the crockpot.

Add Cream and Cheese: Stir in the heavy cream and cheddar cheese, mixing thoroughly until the cheese is melted and the soup is creamy. Season with salt and pepper to taste.

Serve: Ladle the hot potato soup into bowls. Top with crumbled bacon (if using), extra cheese, and chopped chives for a fresh finish.

Enjoy: Pair it with crusty bread or a simple side salad for a complete meal!
