4 large rice paper wraps

1 cup cooked and sliced chicken breast (or tofu for a vegetarian option)

1 cup shredded carrots

1 cup red bell pepper, thinly sliced

1 cup cucumber, julienned

½ cup fresh cilantro leaves

½ cup fresh mint leaves

½ cup bean sprouts

½ cup Thai peanut sauce (store-bought or homemade)

Lime wedges for serving

Instructions
 

Prepare the Ingredients: Gather all the fresh vegetables and herbs. If using chicken, ensure it is cooked and sliced. If using tofu, press it to remove excess moisture and cut into strips.

    Soak Rice Paper Wraps: Fill a large bowl with warm water. Dip each rice paper wrap into the water for about 10-15 seconds until it becomes pliable. Lay them flat on a clean surface.

      Assemble the Wraps: Start layering the prepared ingredients. Place a few slices of chicken or tofu in the center of each wrap followed by shredded carrots, red bell pepper, cucumber, a handful of cilantro, mint, and bean sprouts.

        Roll the Wraps: Fold the sides of the rice paper over the filling, then roll from the bottom up to enclose the filling tightly. Repeat with the remaining wraps.

          Serve: Arrange the wraps on a platter and serve with a small bowl of Thai peanut sauce for dipping. Add lime wedges on the side for an extra zesty kick.
