Ingredients
  

2 cups cooked chicken breast, shredded

1 cup red cabbage, thinly sliced

1 cup carrots, julienned

1 cup bell peppers (red and yellow), thinly sliced

½ cup cucumber, thinly sliced

½ cup fresh cilantro, chopped

¼ cup green onions, chopped

¼ cup peanuts or cashews, crushed (for garnish)

1 lime, juiced

For the Dressing:

3 tablespoons fish sauce

2 tablespoons soy sauce

2 tablespoons honey or maple syrup

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon chili flakes (adjust to taste)

Salt and pepper to taste

Instructions
 

Prepare the Chicken: In a medium bowl, combine the shredded chicken with lime juice and set aside to marinate while preparing the vegetables.

    Chop the Vegetables: In a large bowl, add the red cabbage, carrots, bell peppers, cucumber, cilantro, and green onions. Toss them together to ensure an even mixture.

      Make the Dressing: In a separate bowl, whisk together the fish sauce, soy sauce, honey (or maple syrup), sesame oil, rice vinegar, chili flakes, salt, and pepper until well combined.

        Combine Ingredients: Add the marinated chicken to the bowl of vegetables. Pour the dressing over the salad mixture and toss well to coat all ingredients evenly.

          Garnish and Serve: Transfer the salad to a serving platter or individual bowls. Sprinkle the crushed peanuts or cashews on top for some added crunch and serve immediately!
