Ingredients

2 cups cooked chicken breast, shredded

1 cup red cabbage, finely shredded

1 cup carrots, julienned

1 cup cucumber, thinly sliced

1/2 cup red bell pepper, thinly sliced

1/4 cup fresh cilantro, chopped

1/4 cup green onions, sliced

1/4 cup chopped peanuts (optional)

For the Dressing:

3 tablespoons fish sauce

2 tablespoons lime juice (freshly squeezed)

1 tablespoon honey or agave syrup

1 tablespoon sesame oil

1 clove garlic, minced

1 teaspoon red chili flakes (adjust to taste)

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the shredded chicken, red cabbage, carrots, cucumber, red bell pepper, cilantro, and green onions. Toss gently to combine all ingredients evenly.

Make the Dressing: In a separate small bowl, whisk together the fish sauce, lime juice, honey (or agave syrup), sesame oil, minced garlic, and red chili flakes. Adjust seasoning based on your taste preferences.

Combine: Pour the dressing over the salad mixture and toss well to ensure everything is coated evenly.

Serve: Transfer the salad to a serving bowl and top with chopped peanuts for an extra crunch, if desired.

Chill (Optional): For the best flavor, allow the salad to sit in the refrigerator for about 15-30 minutes before serving.
