Ingredients

2 cups cooked chicken breast, shredded

2 cups mixed salad greens (romaine, spinach, arugula)

1 cup shredded red cabbage

1 cup shredded carrots

1/2 cup chopped fresh cilantro

1/2 cup chopped green onions

1/2 cup thinly sliced bell peppers (red and yellow)

1/2 cup chopped roasted peanuts (for garnish)

For the Dressing:

1/4 cup fish sauce (or soy sauce for a vegetarian option)

1/4 cup fresh lime juice

2 tablespoons honey or agave syrup

1 tablespoon sesame oil

1 clove garlic, minced

1 teaspoon grated ginger

1 teaspoon Sriracha (optional, for heat)

Instructions

Prepare the Chicken: If not using pre-cooked chicken, grill or boil the chicken breasts until fully cooked. Let them cool, then shred with two forks.

Make the Dressing: In a small bowl, whisk together the fish sauce, lime juice, honey, sesame oil, garlic, ginger, and Sriracha until well blended.

Combine Salad Ingredients: In a large mixing bowl, combine the shredded chicken, mixed greens, red cabbage, carrots, cilantro, green onions, and bell peppers. Toss gently to combine.

Dress the Salad: Drizzle the dressing over the salad mixture. Toss gently until the dressings coats the ingredients evenly.

Serve: Transfer the salad to a serving platter or individual plates. Top with chopped roasted peanuts for an added crunch.
