1 lb ground chicken

2 tablespoons vegetable oil

1 onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, finely chopped

1 carrot, grated

1 cup shiitake mushrooms, finely chopped

3 tablespoons soy sauce

1 tablespoon fish sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon brown sugar

1 teaspoon sesame oil

1 teaspoon ground ginger

1/2 teaspoon crushed red pepper flakes (adjust to taste)

1 head of butter or iceberg lettuce, separated into leaves

Fresh cilantro and chopped peanuts for garnish

Lime wedges for serving

Instructions
 

In a large skillet, heat the vegetable oil over medium-high heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until the chicken is fully cooked and browned, about 5-7 minutes.

        Mix in the red bell pepper, grated carrot, and chopped mushrooms. Sauté for another 3-4 minutes until the vegetables are tender.

          In a small bowl, whisk together soy sauce, fish sauce, hoisin sauce, rice vinegar, brown sugar, sesame oil, ground ginger, and crushed red pepper flakes. Pour this sauce over the chicken and vegetable mixture and stir well to combine. Cook for another 2 minutes until heated through.

            Remove from heat and allow the mixture to cool slightly.

              To serve, spoon the chicken mixture into individual lettuce leaves, creating a wrap.

                Garnish with fresh cilantro and chopped peanuts. Serve with lime wedges on the side.
