8 oz spaghetti

1 lb ground beef (or turkey for a lighter option)

1 medium onion, diced

2 cloves garlic, minced

1 (10 oz) can diced tomatoes with green chilies

1 (15 oz) can black beans, drained and rinsed

1 (1 oz) packet taco seasoning

1 cup beef broth (or chicken broth)

1 cup corn (frozen or canned)

1 cup shredded cheddar cheese

1 cup sour cream

Fresh cilantro, for garnish

Salt and pepper, to taste

Instructions
 

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

    Brown the Meat: In a large skillet over medium heat, add the ground beef (or turkey) and cook until browned, breaking it up with a spatula. Drain off any excess fat.

      Add Aromatics: Stir in the diced onion and minced garlic to the skillet with the meat. Cook until the onion is translucent, about 3-4 minutes.

        Season It Up: Sprinkle the taco seasoning over the meat mixture, stirring well to combine. Add in the diced tomatoes with their juices, black beans, broth, and corn. Stir to combine.

          Simmer: Bring the mixture to a gentle simmer, allowing it to cook for 5-7 minutes. Stir occasionally, and let the flavors meld together. Season with salt and pepper to taste.

            Combine: Fold the cooked spaghetti into the skillet, tossing everything together gently until the spaghetti is well coated with the taco mixture.
