1 lb ground beef (or turkey)

1 packet taco seasoning

1/2 cup ranch dressing

1 cup shredded cheddar cheese

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1/2 cup diced red bell pepper

1/4 cup diced onion

1/4 cup chopped fresh cilantro (optional)

1 package mini phyllo pastry cups (or tortilla chips for serving)

Sliced jalapeños (for garnish, optional)

Instructions
 

Cook the Meat: In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat.

    Season the Meat: Stir in the taco seasoning according to package instructions, adding a splash of water if needed. Mix well and let simmer for 5 minutes until the flavors meld.

      Mix the Filling: In a large bowl, combine the cooked meat, ranch dressing, shredded cheddar cheese, black beans, corn, diced red bell pepper, and diced onion. If using, fold in the chopped cilantro as well.

        Prepare the Cups: Preheat the oven to 375°F (190°C). If using mini phyllo pastry cups, place them on a baking sheet. If using tortilla chips, arrange them on a platter.

          Fill the Cups: Spoon the taco-ranch mixture into each phyllo cup generously. If using tortilla chips, pile the mixture onto the chips.

            Bake: Bake in the preheated oven for about 10-12 minutes or until the cheese is melty and the edges of the cups are golden brown.

              Garnish and Serve: Remove from the oven, and if desired, top with sliced jalapeños or extra cilantro for a fresh touch. Serve warm and enjoy the fiesta!
