2 medium sweet potatoes (about 1 pound), peeled and cubed

¾ cup granulated sugar

½ cup brown sugar, packed

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon salt

1 tablespoon unsalted butter, softened

2 large eggs

¾ cup evaporated milk

1 pre-made 9-inch pie crust (or homemade if you prefer)

Whipped cream for serving (optional)

Instructions
 

Cook the Sweet Potatoes: Place the cubed sweet potatoes in a large pot of boiling water. Cook until tender, about 15-20 minutes. Drain and let cool slightly.

    Mash the Potatoes: In a large mixing bowl, mash the cooked sweet potatoes with a potato masher or fork until smooth.

      Combine Ingredients: Add the granulated sugar, brown sugar, vanilla extract, cinnamon, nutmeg, salt, and softened butter to the mashed sweet potatoes. Mix until well combined.

        Mix in Eggs and Milk: Beat the eggs in a separate bowl, then add them along with the evaporated milk to the sweet potato mixture. Stir until everything is smoothly blended.

          Prepare the Pie Crust: Preheat your oven to 350°F (175°C). If using a pre-made crust, place it into a pie dish, crimping the edges if desired. If making homemade, roll the dough and place it into the pie dish.

            Pour the Filling: Carefully pour the sweet potato filling into the prepared pie crust, spreading it evenly.

              Bake: Bake the pie in the preheated oven for 55-60 minutes, or until the filling is set and a toothpick inserted in the center comes out clean. The edges should be slightly puffed and the center may have a slight jiggle.

                Cool and Serve: Let the pie cool on a wire rack for at least 2 hours before slicing to allow it to set completely. Serve warm or chilled with whipped cream on top if desired.
