Ingredients
  

4 large sweet potatoes

1/2 cup granulated sugar

1/4 cup brown sugar

1/2 cup milk

1/4 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1 cup mini marshmallows (for topping)

1/2 cup chopped pecans (for topping)

Instructions
 

Preheat your oven to 350°F (175°C).

    Peel and cube the sweet potatoes and place them in a large pot. Cover with cold water and bring to a boil. Cook for about 20 minutes, or until fork-tender.

      Drain the sweet potatoes and transfer them to a large mixing bowl. Mash until smooth.

        Add the granulated sugar, brown sugar, milk, melted butter, eggs, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes. Mix until well combined and creamy.

          Pour the sweet potato mixture into a greased 9x13 inch baking dish, spreading it out evenly.

            In a separate bowl, mix the mini marshmallows and chopped pecans. Sprinkle this topping mixture over the sweet potato layer in the baking dish.

              Bake in the preheated oven for 30 minutes, until the marshmallows are golden and the casserole is heated through.

                Remove from the oven and allow to cool slightly before serving. Enjoy your ultimate holiday side dish!
