Sweet and Savory Pineapple Chicken and Rice Recipe

Ingredients
  

2 cups jasmine rice

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup pineapple chunks (fresh or canned, drained)

1 red bell pepper, diced

1 small red onion, finely chopped

4 cloves garlic, minced

1-inch piece of ginger, minced

1/4 cup soy sauce

1/4 cup honey

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper to taste

2 green onions, sliced, for garnish

Fresh cilantro, for garnish

1 tablespoon cooking oil (olive or vegetable)

Instructions
 

Cook the Rice: In a medium saucepan, combine jasmine rice with 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and water is absorbed. Fluff with a fork and set aside.

    Prepare the Chicken: In a large skillet or wok, heat the cooking oil over medium-high heat. Add the chicken pieces, seasoning with salt and pepper. Cook until the chicken is browned and fully cooked, about 5-7 minutes. Remove the chicken and set aside.

      Sauté Vegetables: In the same skillet, add the red onion, garlic, and ginger. Sauté until the onion becomes translucent, about 2-3 minutes.

        Create the Sauce: In a bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, and red pepper flakes. Pour this mixture into the skillet with the sautéed vegetables.

          Combine Chicken and Pineapple: Add the cooked chicken and pineapple chunks to the skillet. Stir well to coat everything in the sauce, cooking for another 5 minutes until heated through.

            Mix in the Rice: Gently fold the cooked jasmine rice into the pineapple chicken mixture, ensuring the rice absorbs the wonderful flavors. Cook for another 2-3 minutes until everything is well combined.

              Garnish: Remove from heat and garnish with fresh green onions and cilantro before serving.
