Ingredients
  

2 boneless, skinless chicken breasts

1 cup cooked jasmine rice

1 cup fresh pineapple chunks (or canned, drained)

1/2 cup bell pepper, thinly sliced (red, yellow, or green)

1/4 cup red onion, diced

2 cloves garlic, minced

1/4 cup soy sauce (low sodium)

2 tablespoons honey

1 tablespoon rice vinegar

1 tablespoon cornstarch

1 tablespoon olive oil

1/2 teaspoon ginger, grated

Salt and pepper to taste

Green onions, sliced (for garnish)

Sesame seeds (for garnish)

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 5-6 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.

    Sauté Vegetables: In the same skillet, add the red onion, garlic, and bell pepper. Sauté for 3-4 minutes until the vegetables are softened.

      Make the Sauce: In a small bowl, mix together the soy sauce, honey, rice vinegar, ginger, and cornstarch until well combined. Add the fresh pineapple chunks to the skillet with the sautéed vegetables.

        Combine Ingredients: Pour the sauce over the vegetables and pineapple. Stir well to combine and let it simmer for 2-3 minutes until the sauce thickens slightly.

          Finish the Chicken: Slice the cooked chicken breasts and add them back into the skillet. Toss everything together to coat the chicken in the sweet and savory sauce.

            Serve: Serve the pineapple chicken over a bed of cooked jasmine rice. Garnish with sliced green onions and sesame seeds for added flavor and crunch.
