Ingredients
  

1 lb ground beef (or turkey)

1 packet taco seasoning

1 cup refried beans

1 cup shredded cheddar cheese

1/2 cup diced tomatoes

1/4 cup sliced black olives

1 small red onion, diced

1 avocado, diced

12 mini tortilla cups (store-bought)

Sour cream and salsa, for serving

Fresh cilantro, for garnish

Instructions
 

Preheat the Oven: Set your oven to 350°F (175°C).

    Cook the Meat: In a skillet, brown the ground beef over medium heat, breaking it apart with a spatula until it's fully cooked. Drain any excess fat.

      Season the Meat: Stir in the taco seasoning and add 1/4 cup of water. Simmer for about 5 minutes until the mixture thickens.

        Prepare the Cups: Arrange the mini tortilla cups on a baking sheet for easier handling.

          Layer the Ingredients: In each tortilla cup, add a spoonful of refried beans on the bottom, followed by a layer of seasoned meat. Top with shredded cheddar cheese.

            Bake: Place the filled tortilla cups in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.

              Garnish and Serve: Remove from the oven and let cool for a couple of minutes. Top each cup with diced tomatoes, black olives, red onion, and avocado. Add a dollop of sour cream and serve with salsa on the side. Garnish with fresh cilantro before serving.
