1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell pepper (red or yellow), diced

1/2 cup red onion, finely chopped

1 cup radishes, sliced

1 cup cooked quinoa (optional for added protein)

1/2 cup sunflower seeds

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

Salt and pepper to taste

For the Dressing:

1/4 cup olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

1 teaspoon Dijon mustard

Salt and pepper to taste

Start by preparing the dressing. In a small bowl, whisk together the olive oil, apple cider vinegar, honey (or maple syrup), and Dijon mustard until well combined. Season with salt and pepper to taste. Set aside.

    In a large salad bowl, combine the mixed salad greens, cherry tomatoes, cucumber, bell pepper, red onion, radishes, and quinoa (if using).

      Toss the salad gently to combine all the vegetables evenly.

        Drizzle the dressing over the salad and toss again until everything is well coated.
