1 lb Italian sausage (mild or spicy, based on preference), cut into bite-sized pieces

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 zucchini, sliced into half-moons

1 medium red onion, sliced

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Instructions
 

Preheat and Prepare: Heat a large skillet over medium heat. Add olive oil, allowing it to warm up.

    Cook the Sausage: Once the oil is hot, add the sausage pieces to the skillet. Cook until browned and fully cooked through, about 6-8 minutes. Stir occasionally to ensure even cooking. Remove the sausage from the skillet and set aside.

      Sauté the Veggies: In the same skillet, add the sliced red onion and garlic. Sauté for about 2-3 minutes until the onion becomes translucent. Then, add the sliced bell peppers and zucchini. Cook for another 5-7 minutes, or until the veggies are tender but still slightly crisp.

        Combine and Season: Return the cooked sausage to the skillet with the veggies. Sprinkle in dried oregano, paprika, salt, and pepper. Stir everything together and let it cook for an additional 2-3 minutes to blend the flavors.

          Garnish and Serve: Remove from heat, and if desired, sprinkle with fresh basil or parsley for a burst of color and freshness. Serve warm straight from the skillet.
