2 cups fresh strawberries, hulled and sliced

3/4 cup granulated sugar, divided

2 cups heavy cream

1 cup whole milk

1 vanilla bean, split and scraped (or 2 teaspoons pure vanilla extract)

1/2 teaspoon sea salt

1 tablespoon fresh lemon juice

Instructions
 

In a medium bowl, combine the sliced strawberries and 1/4 cup of sugar. Gently toss to coat the strawberries and let them sit for about 15 minutes to macerate. This will release their juices and enhance the flavor.

    After 15 minutes, mash the strawberries with a fork or potato masher until they reach your desired consistency (leave some chunks for texture, if preferred). Stir in the lemon juice, then set aside.

      In a separate large mixing bowl, whisk together the remaining 1/2 cup of sugar, heavy cream, whole milk, sea salt, and the scraped vanilla bean seeds (and the pod if using). Whisk until the sugar is fully dissolved.

        Fold in the macerated strawberries and any accumulated juices into the cream mixture, making sure to distribute the strawberry goodness evenly.

          Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or until thoroughly chilled (overnight is ideal).

            Once chilled, pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions, typically about 20-25 minutes, or until it reaches a soft-serve consistency.

              Transfer the ice cream to an airtight container, smoothing the top with a spatula. Freeze for at least 4 hours, or until firm.
