Strawberry Cheesecake Truffle Balls

Ingredients
  

1 cup fresh strawberries, pureed

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup crushed graham crackers

1 cup white chocolate chips

1 tbsp coconut oil (optional, for melting chocolate)

Extra graham cracker crumbs for rolling (optional)

Instructions
 

In a medium bowl, combine the pureed strawberries, softened cream cheese, powdered sugar, and vanilla extract. Mix well until smooth and creamy.

    Gradually fold in the crushed graham crackers until fully incorporated.

      Using a small cookie scoop or your hands, form the mixture into bite-sized balls and place them on a lined baking sheet.

        Chill the formed truffle balls in the freezer for about 30 minutes to firm up.

          While the truffles are chilling, melt the white chocolate chips in a microwave-safe bowl. Heat for 30 seconds, then stir. Repeat until completely melted and smooth. If desired, add the coconut oil to the chocolate for a smoother consistency.

            Remove the truffle balls from the freezer and dip each one into the melted white chocolate, using a fork to coat evenly.

              Return the coated truffles to the lined baking sheet. Optionally, roll them in extra graham cracker crumbs for added texture.

                Once all truffles are coated, place them back in the refrigerator for about 15-20 minutes to set the chocolate.
