1 cup all-purpose flour

1/3 cup granulated sugar

1 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup buttermilk

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

Oil, for frying

For the Cheesecake Filling:

8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1/3 cup fresh strawberries, pureed

1 tablespoon lemon juice

For the Coating:

1/2 cup granulated sugar

1 teaspoon ground cinnamon

In a mixing bowl, combine the flour, granulated sugar, baking powder, baking soda, salt, and cinnamon. Whisk until well blended.

    In a separate bowl, mix together the buttermilk, egg, melted butter, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients and mix just until combined. Do not overmix; the batter should be thick.

        Heat oil in a deep frying pan over medium heat. Test the temperature by dropping a small amount of batter into the oil; it should sizzle and float to the top.

          Using a small cookie scoop or spoon, carefully drop teaspoon-sized balls of batter into the hot oil. Fry the donut holes until golden brown on all sides, about 2-3 minutes. Remove and drain on paper towels.

            While the donut holes cool, prepare the cheesecake filling. In a bowl, beat the softened cream cheese until smooth. Add powdered sugar, vanilla extract, pureed strawberries, and lemon juice. Mix until well combined and creamy.
