SPRING PASTA - Creamy Chicken Pesto Pasta with Roasted Tomatoes and Pine Nuts

8 oz (225g) pasta of choice (fettuccine or penne works well)

2 tablespoons olive oil

1 pound (450g) boneless, skinless chicken breast, diced

Salt and pepper to taste

1 cup fresh basil pesto (store-bought or homemade)

1 cup heavy cream

1 cup grape or cherry tomatoes, halved

1/2 cup pine nuts, toasted

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions
 

Preheat the oven: Start by preheating your oven to 400°F (200°C).

    Roast the tomatoes: On a baking sheet, toss the halved grape or cherry tomatoes with a drizzle of olive oil, salt, and pepper. Roast in the preheated oven for about 15-20 minutes until they are soft and slightly caramelized. Remove from the oven and set aside.

      Cook the pasta: While the tomatoes are roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and reserve 1 cup of pasta water.

        Cook the chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook for about 6-8 minutes, or until the chicken is cooked through and golden brown.

          Combine ingredients: Reduce the heat to low and add the pesto and heavy cream to the skillet with the chicken. Stir well to combine, and let it simmer for 2-3 minutes. If the sauce is too thick, add some reserved pasta water a little at a time until you reach your desired consistency.

            Mix in pasta and tomatoes: Add the drained pasta and roasted tomatoes to the creamy pesto chicken mixture. Toss everything together until well coated.

              Finish with cheese and pine nuts: Stir in the grated Parmesan cheese until melted and creamy. Finally, sprinkle the toasted pine nuts over the top and gently toss to combine.

                Garnish and serve: Plate the pasta and garnish with fresh basil leaves. Enjoy your delicious Spring Pasta!
