300g spaghetti or fettuccine

200g fresh spinach, washed and chopped

250g mushrooms, sliced (preferably cremini or shiitake)

3 tablespoons olive oil

3 cloves garlic, minced

1 small onion, diced

1/2 teaspoon red pepper flakes (optional)

1/2 cup vegetable broth or chicken broth

1/4 cup heavy cream

1/2 cup grated Parmesan cheese (plus extra for serving)

Salt and black pepper, to taste

Fresh basil or parsley, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti or fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add diced onion and sauté for about 3-4 minutes until translucent. Add minced garlic and sliced mushrooms; cook for another 5-6 minutes until the mushrooms are golden and have released their moisture.

      Add Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Season with red pepper flakes, salt, and black pepper.

        Create the Sauce: Pour in the vegetable or chicken broth, allowing it to simmer and reduce slightly for about 3 minutes. Stir in the heavy cream and Parmesan cheese, mixing until the cheese melts and the sauce thickens. Adjust the seasoning to taste.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet and gently toss to combine, adding reserved pasta water a little at a time to achieve your desired sauce consistency.
