Ingredients
  

1 lb fresh salmon fillet, diced

1 cup sushi rice

1 ¼ cups water

2 tablespoons rice vinegar

1 tablespoon sugar

1 teaspoon salt

½ cup mayonnaise

2 tablespoons sriracha (adjust to taste)

1 tablespoon soy sauce

1 teaspoon sesame oil

1 avocado, sliced

¼ cup green onions, chopped

1 sheet nori, cut into strips

2 tablespoons sesame seeds

Pickled ginger and more sriracha for serving (optional)

Instructions
 

Preheat Oven: Start by preheating your oven to 350°F (175°C).

    Cook the Rice: Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes or until the water is absorbed. Remove from heat and let it sit, covered, for an additional 10 minutes.

      Season the Rice: In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice, making sure to avoid mashing it. Set the seasoned rice aside.

        Prepare the Spicy Salmon Mixture: In another bowl, combine the diced salmon, mayonnaise, sriracha, soy sauce, and sesame oil. Mix until just combined and the salmon is well coated.

          Assemble the Bake: In a greased 9x9 inch baking dish, spread the seasoned sushi rice evenly across the bottom. Top with the spicy salmon mixture, spreading it evenly over the rice.

            Bake: Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the top is slightly golden and bubbly.

              Garnish: Once out of the oven, garnish the bake with sliced avocado, chopped green onions, and sesame seeds. Top with nori strips for added flavor.
