1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons cornstarch

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon paprika

1 tablespoon olive oil

1/4 cup Sriracha sauce

1/4 cup honey

1 tablespoon soy sauce

1 teaspoon apple cider vinegar

1 teaspoon sesame oil (optional)

Sesame seeds and chopped green onions for garnish (optional)

Instructions
 

Prepare the Chicken: In a large bowl, combine the cornstarch, salt, black pepper, garlic powder, and paprika. Add the chicken pieces and toss to coat evenly.

    Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the coated chicken bites to the skillet in a single layer, making sure not to overcrowd the pan. Cook for about 5-7 minutes, turning occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Make the Sauce: In the same skillet, reduce the heat to medium. In a small bowl, whisk together Sriracha, honey, soy sauce, apple cider vinegar, and sesame oil (if using). Pour the mixture into the skillet and let it simmer for about 2-3 minutes, stirring constantly until the sauce has slightly thickened.

        Coat the Chicken: Add the cooked chicken bites back into the skillet and toss them in the spicy honey sauce until fully coated. Cook together for an additional 1-2 minutes.

          Serve: Transfer the chicken bites to a serving platter and garnish with sesame seeds and chopped green onions if desired.
