4 bone-in, skin-on chicken thighs

1/4 cup honey

2 tablespoons soy sauce

4 cloves garlic, minced

1 tablespoon sriracha or chili paste (adjust for heat preference)

1 tablespoon apple cider vinegar

1 teaspoon ground ginger

1 teaspoon sesame oil

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1 tablespoon chopped fresh cilantro (for garnish)

Sesame seeds (for garnish)

Marinate the Chicken: In a large bowl, whisk together honey, soy sauce, minced garlic, sriracha, apple cider vinegar, ground ginger, sesame oil, salt, and black pepper. Add the chicken thighs to the bowl, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for a deeper flavor.

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Sear the Chicken: In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, remove the chicken from the marinade (reserve the marinade) and place the thighs skin-side down in the skillet. Sear for about 5-7 minutes until the skin is golden brown and crispy.

        Add Marinade: Flip the chicken thighs over, then pour the reserved marinade over them. Bring to a simmer for about 2 minutes.

          Bake the Chicken: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (75°C). The chicken should be caramelized and sticky.
