2 large chicken breasts

1 cup buttermilk

1 teaspoon hot sauce (more to taste)

1 cup all-purpose flour

1 tablespoon paprika

1 teaspoon cayenne pepper

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Vegetable oil for frying

4 sandwich buns (brioche or your choice)

4 leaves of romaine lettuce

1 large tomato, sliced

1/2 cup mayonnaise

1 tablespoon sriracha (or to taste)

Pickles (optional)

Instructions
 

Marinate Chicken: In a bowl, combine buttermilk and hot sauce. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for deeper flavor.

    Prepare the Coating: In a large mixing bowl, whisk together flour, paprika, cayenne pepper, garlic powder, onion powder, salt, and pepper. This will be your spicy coating.

      Heat the Oil: In a large skillet, pour in enough vegetable oil to cover the bottom (about 1/2 inch). Heat over medium-high heat until the oil ripples but isn’t smoking.

        Dredge Chicken: Remove chicken from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the flour mixture, pressing it firmly to ensure a thick coating.

          Fry the Chicken: Carefully place the coated chicken breasts into the hot oil. Cook for about 5-7 minutes on each side, or until golden brown and crispy, and the internal temperature reaches 165°F (74°C). Remove and place on paper towels to drain excess oil.

            Prepare the Sauce: In a small bowl, mix together mayonnaise and sriracha for a spicy spread. Adjust the sriracha quantity to your preferred heat level.

              Assemble the Sandwich: Toast the sandwich buns lightly. Spread a generous amount of sriracha mayo on the bottom bun. Add a crispy chicken breast, a leaf of romaine lettuce, a slice of tomato, and pickles if desired. Top with the other half of the bun.
