Ingredients
  

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 inch fresh ginger, grated

4 medium carrots, diced

1 cup red lentils, rinsed

4 cups vegetable broth

1 can (14 oz) diced tomatoes

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

2 cups spinach leaves

Juice of 1 lime

Chopped cilantro, for garnish

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, until softened. Stir in the garlic and grated ginger, cooking for another minute until fragrant.

    Cook Carrots: Add the diced carrots to the pot, stirring to combine. Cook for approximately 5-7 minutes, until they start to soften.

      Add Lentils and Spices: Stir in the red lentils, ground cumin, smoked paprika, cayenne pepper, salt, and pepper. Mix well to evenly coat the lentils and vegetables with the spices.

        Incorporate Liquids: Pour in the vegetable broth and diced tomatoes (with their juices). Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 20-25 minutes, or until the lentils and carrots are tender.

          Blend for Creaminess: Using an immersion blender, carefully blend the soup until it reaches your desired level of creaminess. You can also transfer it to a blender in batches, but be cautious of the hot liquid.

            Add Spinach and Lime: Stir in the spinach and lime juice, cooking for an additional 2-3 minutes until the spinach is wilted.

              Garnish and Serve: Taste and adjust seasoning with more salt, pepper, or cayenne if needed. Ladle the soup into bowls and garnish with chopped cilantro. Serve hot with crusty bread on the side.
