Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 tablespoon Cajun seasoning (store-bought or homemade)

2 tablespoons olive oil

1 medium onion, diced

1 red bell pepper, diced

1 green bell pepper, diced

3 cloves garlic, minced

1 cup long-grain rice

2 cups chicken broth

1 can (15 oz) diced tomatoes, drained

1 cup corn kernels (fresh, frozen, or canned)

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: sliced jalapeños for extra heat

Instructions
 

Season the Chicken: In a large bowl, toss the chicken pieces with Cajun seasoning until well-coated.

    Cook the Chicken: In a large skillet or pan, heat olive oil over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes, or until browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Veggies: In the same skillet, add the diced onion and sauté for about 2-3 minutes until translucent. Then, add the diced red and green bell peppers and garlic. Cook for an additional 3-4 minutes until the vegetables soften.

        Add Rice and Broth: Stir in the rice and cook for 1-2 minutes until lightly toasted. Next, pour in the chicken broth, and add the drained diced tomatoes, corn, smoked paprika, and salt and pepper to taste. Stir well to combine.

          Combine and Simmer: Bring the mixture to a light boil. Reduce the heat to low, return the cooked chicken to the skillet, cover, and simmer for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.

            Final Touches: Once the rice is cooked, fluff it with a fork and taste to adjust seasoning if necessary. Garnish with fresh parsley and optional sliced jalapeños for an extra kick.
