Ingredients

1 lb smoked sausage, sliced

4 medium potatoes, diced

1 medium onion, chopped

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

1 cup bell peppers (any color), sliced

Fresh parsley, chopped (for garnish)

Instructions

Prep the Ingredients: Start by washing and dicing the potatoes into uniform cubes. Chop the onion, mince the garlic, and slice the smoked sausage. Have your bell peppers ready for later.

Cook the Potatoes: In a large skillet, heat the olive oil over medium heat. Add the diced potatoes, season with salt, pepper, and smoked paprika. Cook for about 10-15 minutes, stirring occasionally, until they start to brown and become tender.

Add the Sausage and Onions: Once the potatoes are nearly done, add the sliced smoked sausage and chopped onions to the skillet. Sauté for another 5-7 minutes until the sausage is heated through and the onions become translucent.

Incorporate Garlic and Peppers: Stir in the minced garlic and sliced bell peppers. Cook for an additional 3-4 minutes, allowing the flavors to meld together. Make sure the garlic does not burn.

Season and Serve: Finally, sprinkle dried thyme over the dish for added flavor. Adjust seasoning with salt and pepper as needed. Remove from heat, garnish with freshly chopped parsley, and serve hot.
