12 frozen potato and cheese pierogi

1 lb kielbasa sausage, sliced into rounds

1 medium onion, thinly sliced

2 cups sauerkraut, drained

1 cup shredded sharp cheddar cheese

1 cup chicken broth

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon caraway seeds (optional)

Salt and pepper, to taste

Fresh parsley, chopped for garnish (optional)

Instructions
 

Sauté the Onion: In a skillet, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent and slightly caramelized, about 5-7 minutes. Add garlic and sauté for an additional minute. Remove from heat.

    Prepare the Slow Cooker: Spray the inside of the slow cooker with cooking spray for easy cleanup. Layer half of the sauerkraut at the bottom.

      Layer the Ingredients: Place half of the pierogi on top of the sauerkraut, followed by half of the kielbasa slices and half of the sautéed onions. Sprinkle with a pinch of salt, pepper, and half of the shredded cheddar cheese.

        Repeat the Layers: Add the remaining sauerkraut, followed by the remaining pierogi, kielbasa, sautéed onion, and top with the remaining cheddar cheese.

          Add Broth and Seasonings: Pour the chicken broth evenly over the top layer. Sprinkle paprika, caraway seeds (if using), and additional salt and pepper over the entire dish.

            Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the pierogi are tender and the flavors meld together.

              Serve: Gently stir the mixture before serving to combine everything. Garnish with freshly chopped parsley, if desired.

                Enjoy: Serve warm as a hearty main dish with a side of sour cream or additional sauerkraut.
