Ingredients
  

1 pound Italian sausage, casings removed

4 medium russet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups low-sodium chicken broth

2 cups heavy cream

1 cup frozen corn

1 cup shredded carrots

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

2 cups fresh kale or spinach, chopped

1/2 cup grated Parmesan cheese

Fresh parsley, chopped for garnish (optional)

Instructions
 

In a large skillet over medium heat, cook the sausage until browned and fully cooked, breaking it apart with a spoon. Drain excess fat and transfer the sausage to the slow cooker.

    Add the diced potatoes, chopped onion, minced garlic, chicken broth, frozen corn, shredded carrots, dried thyme, and dried oregano to the slow cooker. Stir everything together.

      Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.

        Once the cooking time is up, stir in the heavy cream, chopped kale or spinach, and grated Parmesan cheese. Mix well until the greens are wilted and the soup is creamy. Season with salt and pepper to taste.

          Let the soup simmer for an additional 15-20 minutes on low to meld the flavors together.

            Serve hot, garnished with fresh parsley if desired, and enjoy the comforting flavors!
