Ingredients
  

1 pound ground beef

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

1 medium onion, diced

2 cloves garlic, minced

2 cups frozen tater tots

1 cup shredded cheddar cheese

Salt and pepper to taste

Optional toppings: sliced green onions, sour cream, or avocado

Instructions
 

Brown the Beef: In a skillet over medium-high heat, cook the ground beef until browned. Drain excess fat and set aside.

    Combine Ingredients: In the slow cooker, combine the cooked beef, black beans, corn, diced tomatoes (with juices), taco seasoning, onion, and garlic. Stir until well mixed.

      Layer Tater Tots: Spread the frozen tater tots evenly over the top of the casserole mix in the slow cooker.

        Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours, until the tater tots are crispy and golden.

          Add Cheese: In the last 30 minutes of cooking, sprinkle shredded cheddar cheese over the tater tots and cover until melted.

            Serve: Once cooking is complete, serve warm in bowls and add optional toppings like sliced green onions, sour cream, or avocado as desired.
