2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

4 medium carrots, sliced

3 ribs of celery, chopped

1 large onion, diced

3 cloves garlic, minced

4 medium potatoes, diced (Yukon Gold or red potatoes work well)

1 cup frozen peas

4 cups chicken broth

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and black pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Sear the Chicken: In a skillet, heat the olive oil over medium-high heat. Add the chicken thighs and season with salt and pepper. Sear the chicken for about 4-5 minutes until browned on all sides. Transfer to the slow cooker.

    Prepare the Vegetables: In the same skillet, add the onion, carrots, and celery. Sauté for about 3-4 minutes until just softened. Add the garlic and sauté for an additional minute. Transfer this mixture to the slow cooker alongside the chicken.

      Add Remaining Ingredients: To the slow cooker, add the diced potatoes, chicken broth, Worcestershire sauce, thyme, rosemary, and bay leaf. Season with additional salt and pepper if desired. Stir everything to combine.

        Slow Cook: Cover the slow cooker with its lid and set it on low for 6-8 hours or high for 3-4 hours. The chicken should be tender and the flavors meld beautifully.

          Finish the Stew: About 30 minutes before serving, stir in the frozen peas. Remove the bay leaf before serving.
