Ingredients

1.5 lbs boneless, skinless chicken thighs

4 cups low-sodium chicken broth

1 cup water

2 cups carrots, sliced

1 cup celery, diced

1 medium onion, chopped

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried parsley

½ teaspoon black pepper

½ teaspoon salt (adjust to taste)

2 cups egg noodles

Juice of 1 lemon

Fresh parsley for garnish (optional)

Instructions

Prep the Chicken: Place the chicken thighs at the bottom of the slow cooker. Season with salt, black pepper, dried thyme, and dried parsley for flavor.

Add the Veggies: Layer the sliced carrots, diced celery, chopped onion, and minced garlic over the chicken. These will infuse the soup with delightful sweetness and depth.

Add the Liquids: Pour in the chicken broth and water. This combination will create a rich and savory base for your soup.

Cook It Up: Cover the slow cooker and set it on low for 6-8 hours or high for 4-5 hours, until the chicken is tender and easily shredded.

Shred the Chicken: Once the cooking time is up, carefully remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken back to the pot.

Add the Noodles: Stir in the egg noodles, cover, and cook on high for an additional 30 minutes, or until the noodles are tender.

Finishing Touches: Just before serving, stir in the lemon juice for a bright note that balances the richness of the soup.

Garnish and Serve: Ladle the soup into bowls, optionally garnishing with fresh parsley. Enjoy your hearty and comforting meal!
