Ingredients

4 slices of ciabatta bread

4 ounces of fresh mozzarella cheese, sliced

4 ounces of prosciutto, thinly sliced

1 cup of arugula or fresh spinach

2 tablespoons of pesto sauce

2 tablespoons of balsamic glaze

2 tablespoons of olive oil

Salt and pepper to taste

Instructions

Preheat a skillet or panini press over medium heat.

Lay out the ciabatta slices and spread 1 tablespoon of pesto sauce on each slice.

On two of the slices, layer the mozzarella cheese, followed by the prosciutto, and then the arugula (or spinach).

Sprinkle with a bit of salt and pepper to enhance the flavors.

Top with the remaining ciabatta slices to create two sandwiches.

Brush the outside of the sandwiches with olive oil to promote browning and crispiness.

Place the sandwiches in the preheated skillet or panini press. If using a skillet, cover and press down with a spatula.

Cook for about 3-4 minutes on each side until the bread is golden and the cheese has melted.

Once cooked, drizzle with balsamic glaze before cutting in half and serving warm.
