Ingredients

1 pound boneless, skinless chicken thighs

1 can (13.5 oz) coconut milk

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon chili paste (adjust to taste)

4 cloves garlic, minced

1 teaspoon ginger, grated

1 teaspoon paprika

½ teaspoon cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Marinade: In a mixing bowl, whisk together the coconut milk, olive oil, soy sauce, lime juice, chili paste, minced garlic, grated ginger, paprika, cumin, salt, and pepper until well combined.

Marinate the Chicken: Add the chicken thighs to the marinade, ensuring they are fully coated. Let it marinate for at least 10 minutes (or up to an hour in the refrigerator for more flavor).

Cook the Chicken: Heat a non-stick skillet over medium-high heat. Add the marinated chicken thighs (reserve the marinade) and sear for about 4-5 minutes on each side until golden brown and cooked through.

Add the Sauce: Pour in the reserved marinade and bring it to a simmer. Let it cook for an additional 5 minutes, allowing the sauce to thicken slightly and coat the chicken.

Serve: Remove the skillet from the heat. Transfer the chicken to a plate, drizzle with extra sauce, and garnish with chopped cilantro. Serve with lime wedges on the side.
