1 cup cottage cheese (preferably low-fat)

4 large eggs, hard-boiled and chopped

1/4 cup mayonnaise (or Greek yogurt for a healthier option)

1 tablespoon Dijon mustard

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1/4 cup celery, finely chopped

2 tablespoons green onions, sliced

Salt and black pepper to taste

Instructions
 

Begin by hard-boiling the eggs. Place the eggs in a saucepan, cover with water, and bring to a boil. Once boiling, cover the pan, remove from heat, and let sit for 12-15 minutes. Afterward, place the eggs in an ice bath for 5-10 minutes to cool.

    In a mixing bowl, combine the cottage cheese, mayonnaise (or Greek yogurt), and Dijon mustard. Mix well until creamy.

      Gently peel the cooled hard-boiled eggs and chop them into small pieces. Add them to the bowl with the cottage cheese mixture.

        Fold in the chopped celery, green onions, and dill. Season with salt and black pepper to taste. Be careful not to over-mix; you want to maintain some texture from the eggs.
