1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/4 teaspoon salt

1 cup milk (or almond milk)

1 large egg

2 tablespoons unsalted butter, melted (plus extra for cooking)

1 cup fresh blueberries (or frozen, thawed)

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

    In a separate bowl, beat the egg and then add the milk and melted butter. Mix until smooth.

      Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to over-mix; a few lumps are okay.

        Fold in the blueberries gently to avoid breaking them.

          Heat a non-stick skillet or griddle over medium heat and add a small amount of butter to coat the surface.

            Pour about 1/4 cup of the batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

              Carefully flip the pancakes and cook for another 1-2 minutes, or until golden brown.

                Repeat this process until all the batter is used, adding more butter to the skillet as needed.

                  Serve warm with maple syrup, additional blueberries, or your favorite toppings.
