Ingredients
  

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

3 cloves garlic, minced

Juice of 1 lime

Tortillas (flour or corn)

Optional toppings: avocado, sour cream, pico de gallo, shredded cheese, fresh cilantro

Instructions
 

Marinate the Shrimp: In a mixing bowl, combine the shrimp with olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss until the shrimp are well coated. Let it marinate for about 15-20 minutes while you prepare the vegetables.

    Sauté the Vegetables: Heat a large skillet over medium-high heat. Add a tablespoon of olive oil. Once the oil is hot, add the sliced bell peppers and onion. Sauté for about 4-5 minutes until they begin to soften. Add minced garlic and continue to cook for another 1-2 minutes until fragrant. Remove the vegetables from the skillet and set aside.

      Cook the Shrimp: In the same skillet, add the marinated shrimp. Cook for 2-3 minutes on each side until they turn pink and opaque. Squeeze the lime juice over the shrimp while they cook.

        Combine: Once the shrimp are cooked through, add the vegetables back into the skillet with the shrimp. Toss everything together for about a minute to heat through.

          Serve: Warm the tortillas in a separate pan or microwave. Serve the shrimp and vegetable mixture in the tortillas, and top with your choice of avocado, sour cream, pico de gallo, shredded cheese, and fresh cilantro.
