Ingredients
  

1 cup jasmine rice

2 cups water or seafood stock

1 lb large shrimp, peeled and deveined

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon paprika

½ teaspoon cayenne pepper (optional for heat)

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 avocado

1 tablespoon lime juice

½ teaspoon garlic powder

2 tablespoons fresh cilantro, chopped

Lime wedges for serving

Instructions
 

Cook the Rice: In a medium saucepan, combine jasmine rice and water (or seafood stock). Bring to a boil, then lower the heat and cover. Let it simmer for about 15 minutes or until the liquid is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff with a fork.

    Sauté the Shrimp: While the rice is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

      Season and Cook Shrimp: Add the shrimp to the skillet. Season with paprika, cayenne pepper (if using), salt, and pepper. Cook for about 3-4 minutes on one side until they turn pink, then flip and cook for another 2-3 minutes until fully cooked. Remove from heat.

        Prepare the Avocado Dressing: In a blender or food processor, combine the avocado, lime juice, garlic powder, and cilantro. Blend until smooth and creamy, adding a splash of water if necessary to achieve your desired consistency. Season with salt to taste.

          Assemble the Bowl: In bowls, layer the cooked jasmine rice, sautéed shrimp, halved cherry tomatoes, and diced cucumber. Drizzle generously with the creamy avocado dressing.
