Instructions

Cook the Chicken:

    - In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes).

      - Stir in the minced garlic, thyme, paprika, salt, and pepper, and cook for an additional 2 minutes.

        - Add the shredded chicken and chicken broth; let simmer for about 10 minutes until heated through and well combined. Set aside.

          Prepare the Gravy:

            - In a medium saucepan, melt the butter over medium heat. Whisk in the flour to create a roux and cook for about 2 minutes until bubbly.

              - Gradually whisk in the chicken broth, stirring continuously until the mixture thickens, about 5-7 minutes.

                - Stir in the milk or heavy cream, and season with salt and pepper to taste. If the gravy is too thick, add more chicken broth until the desired consistency is achieved.

                  Make the Mashed Potatoes:

                    - In a large pot, bring salted water to a boil. Add the diced potatoes and cook until tender (about 15-20 minutes).

                      - Drain the potatoes and return them to the pot. Add butter and milk (or cream), then mash until smooth. Season with salt and pepper to taste.

                        Assembly:

                          - Serve a generous scoop of creamy mashed potatoes on a plate. Top with the shredded chicken and pour the savory gravy over the top. Garnish with fresh parsley if desired.
